Ingredients

Cheese and Peppers

  • 16 oz 2 blocks (8 oz each) of Pepper Jack cheese, shredded Use creamy Pepper Jack for best flavor.
  • 2-3 pieces jalapeños, diced Adjust quantity for desired spice level.

Breading and Coating

  • 0.5 cup all-purpose flour
  • 1 large egg
  • 1 cup milk Whole milk preferred.
  • 1.5 cups breadcrumbs Use crunchy variety.
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • as needed oil for frying Heat to 350°F (175°C).

Instructions

Preparation

  • In a mixing bowl, combine the shredded Pepper Jack cheese with the diced jalapeños.
  • Shape the mixture into balls, approximately 1.5 inches in diameter.
  • Place the shaped balls on a cookie sheet and freeze them for about 30 minutes.

Breading

  • Preheat your deep fryer to 350°F (175°C).
  • Prepare three separate bowls: one for flour, one for whisked egg and milk, and one for breadcrumbs mixed with cayenne, paprika, and garlic powder.
  • Once the cheese balls are frozen, coat them in flour, dip into the egg mixture, and roll in the seasoned breadcrumbs.

Cooking

  • Carefully add the breaded cheese balls in batches to the hot oil.
  • Fry for about 3-4 minutes, or until they turn a beautiful golden brown.
  • Remove Rattlesnake Bites from the oil and let them drain on paper towels.

Serving

  • Serve hot with your favorite dipping sauces.

Notes

Ensure to compress the cheese and jalapeño mixture tightly into balls and don't skip the freezing step for best results. Can be made ahead of time and frozen until ready to fry.
