Instructions

Preparation

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  • Pat the 4 red snapper fillets dry and season them generously with salt, pepper, and paprika.
  • Gently place the fillets into the hot skillet and sizzle for about 4 to 5 minutes on each side, until golden brown.
  • Remove the fillets from the skillet and set aside.

Cooking the Sauce

  • In the same skillet, add chopped onion, bell pepper, and minced garlic, sautéing for around 3 to 4 minutes until tender.
  • Add the can of diced tomatoes, Creole seasoning, thyme, salt, and pepper, stirring to combine.
  • Allow the mixture to simmer for about 5 minutes.
  • Stir in ½ cup of heavy cream and let the sauce thicken for 3 to 5 minutes.
  • Return the red snapper fillets to the skillet, spooning the sauce over them, and heat through for another 2 to 3 minutes.
  • Sprinkle with freshly chopped parsley before serving.

Notes

For a lighter version, substitute heavy cream with coconut milk. Ensure fish isn't overcrowded to maintain optimal cooking temperature. Serve with fluffy rice or salad.
