Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 9x5-inch loaf pan by greasing and flouring it.
  • In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  • In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  • Add the eggs one at a time, beating well after each addition. Then mix in the vanilla extract and red food coloring.
  • Stir in the buttermilk and vinegar until smooth.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

Baking

  • Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Frosting

  • For the frosting, beat together the cream cheese and butter until the mixture is smooth.
  • Gradually add the powdered sugar, then stir in the vanilla extract and a pinch of salt.
  • Once the loaf cake is cool, frost the top evenly, creating decorative peaks if desired.
