Instructions
 

Preparation

  • Preheat your oven to 325°F (165°C).
  • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well incorporated and press into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
  • In a large bowl, beat together cream cheese, sour cream, granulated sugar, vanilla extract, cocoa powder, and red food coloring until smooth.

Baking the cheesecake

  • Add the eggs one at a time, mixing well after each addition.
  • Fold in the all-purpose flour until fully combined. Pour mixture into the cooled crust.
  • Bake for 55-60 minutes or until the center is slightly jiggly but edges are set.
  • Let cool to room temperature, then refrigerate for at least 4 hours.

Topping and serving

  • Mix sliced strawberries with 2 tablespoons of sugar and let sit for 10 minutes.
  • Whip heavy cream with powdered sugar until stiff peaks form.
  • Top cheesecake with whipped cream and marinated strawberries before serving.
