Instructions

Cooking the Pasta

Sautéing Vegetables

  • In a skillet over medium heat, heat the olive oil. Add the diced onion and bell pepper, cooking until tender, roughly 5 minutes.
  • Stir in the minced garlic and cook for an additional minute until fragrant.

Combining Ingredients

  • Add the diced tomatoes and chilies to the sautéed vegetables. If using, add the ground beef or sausage. Let it simmer for about 5 minutes.

Mixing Pasta and Sauce

  • Fold the cooked rotini into the skillet with the sauce, coating each piece. Add reserved pasta water if the mixture is too thick.

Adding Cheese

  • Sprinkle the shredded cheese over the skillet. Reduce the heat to low and let the cheese melt completely.
