Instructions

Preparation

  • Mix the blackening spices in a small bowl until well combined.
  • Pat the cod fillets dry with a paper towel and rub each side with about 1 teaspoon of olive oil.
  • Generously coat both sides of the fillets with the seasoning mix, shaking off any excess.

Cooking

  • Heat the remaining olive oil in a large skillet over medium-high heat.
  • Once the oil is hot, place the seasoned fillets in the skillet.
  • Sear them for about 3-5 minutes or until the blackening rub turns dark and crispy.
  • Add a tablespoon of butter to the pan and let it melt.
  • Flip each fillet and cook for another 1-2 minutes until the fish is flaky and cooked through.

Serving

  • Serve warm alongside rice and a fresh green salad.

Notes

Consider marinating the fish in blackening seasoning mixed with olive oil for an hour before cooking for enhanced flavors. Reduce or omit cayenne pepper for a milder dish. Using a cast-iron skillet yields the best results.
