Instructions

Preparation

  • Melt the unsalted butter with the oil from the sun-dried tomatoes in a saucepan over medium heat.
  • Add the minced garlic and sauté for about 20 seconds.
  • Pour in the chicken stock and heavy cream, bringing this mixture to a gentle simmer. Let it cook for approximately 8 minutes until the sauce thickens.
  • Stir in the grated Parmesan cheese, allowing it to melt and blend into the sauce for an additional 3-5 minutes.
  • In your slow cooker, place the chicken thighs side by side and sprinkle them with dried basil, oregano, parsley, salt, and ground pepper.
  • Layer the sliced sun-dried tomatoes over the seasoned chicken and pour the creamy sauce over the entire dish.

Cooking

  • Cover your slow cooker and cook on high for 3 hours or on low for 6 hours until the chicken is fall-apart tender.
  • When it’s done, remove the chicken from the slow cooker and stir in the baby spinach until it’s just wilted.

Serving

  • Serve the Slow Cooker Tuscan Chicken with the creamy sauce drizzled on top.

Notes

For best results, sear the chicken for 2-3 minutes on each side before placing it in the slow cooker. Feel free to experiment with different herbs.
