Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, combine the graham cracker crumbs and granulated sugar, then mix in the melted butter until well-combined.
  • Press the crust mixture into mini cupcake liners or silicone molds, and bake for 8-10 minutes until golden brown.
  • Let the crust cool completely.

Filling

  • In a mixing bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy.
  • Whip the chilled heavy cream in a separate bowl until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture, taking care to maintain fluffiness.
  • Add the finely chopped strawberries and fold gently until incorporated.
  • Spoon or pipe the cheesecake filling onto the cooled crusts, filling generously.
  • Top with optional mini chocolate chips and garnish with sliced strawberries.
  • Refrigerate for at least 2 hours before serving.

Notes

For best results, start with room temperature cream cheese and allow the crust to cool completely before adding the filling. These bites can be made a day ahead and stored in the refrigerator.
