Ingredients

  • 1/4 cup strawberry purée Infuses the filling with fresh strawberry flavor.

For the topping

  • 1/2 cup fresh strawberries, chopped Enhances the topping.
  • 2 tbsp sugar To sweeten the strawberries.
  • 1 tbsp lemon juice Adds necessary tartness.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Mix the crushed biscuits with melted butter and press firmly into a 9-inch springform pan. Bake for 10 minutes and set aside to cool.
  • In a large bowl, beat the cream cheese and mascarpone until smooth. Gradually add powdered sugar, then heavy cream and vanilla extract, mixing until creamy. Fold in strawberry purée.
  • Pour the filling over the cooled crust and smooth the top. Cover and refrigerate for at least 4 hours.

Topping

  • Combine chopped strawberries, sugar, and lemon juice in a bowl. Let sit for 30 minutes to create a syrup.
  • Remove cheesecake from springform pan and top with strawberry mixture before serving.

For best results, ensure all dairy ingredients are at room temperature. You can customize by adding more strawberry purée or using different fruits.
