Ingredients
  

For the Chicken and Sauce

  • 1 lb diced chicken thighs or breasts Use tender cuts for the best flavor.
  • 1/4 cup soy sauce Can substitute with tamari for gluten-free.
  • 2 tablespoons brown sugar Adds sweetness to balance the salt.
  • 1 tablespoon honey For extra sweetness.
  • 1 tablespoon rice vinegar Provides brightness.
  • 2 cloves minced garlic Enhances flavor profile.
  • 1 teaspoon grated ginger Adds warmth.
  • 1 teaspoon cornstarch To thicken the sauce.
  • 1 tablespoon water For cornstarch slurry.

For the Rice and Toppings

  • 2 cups cooked sushi or jasmine rice Sushi rice is recommended for stickiness.
  • 1 large avocado, diced Hass avocados preferred.
  • 1 tablespoon lime juice Prevents avocado from browning.
  • 1 teaspoon sesame seeds For garnish.
  • 1 teaspoon chopped green onion Adds freshness and crunch.

Instructions
 

Preparation

  • Heat a skillet over medium heat. Add the diced chicken and cook until browned and thoroughly cooked, about 5-7 minutes.
  • In a bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, garlic, and ginger to make the teriyaki sauce.

Cooking

  • Pour the teriyaki sauce over cooked chicken in the skillet, stirring well. Allow to simmer for an additional 5 minutes.
  • Make a cornstarch slurry by mixing cornstarch with water. Add to the skillet, stirring until the sauce thickens and becomes glossy.

Assembly

  • Toss diced avocado with lime juice and a pinch of salt in a separate bowl.
  • Using a ring mold or small bowl, layer the cooked rice, lime-infused avocado, and teriyaki chicken.
  • Garnish with sesame seeds and chopped green onion.

Serving

  • Carefully lift the mold to reveal the layered dish and serve immediately.

Notes

For enhanced flavor, marinate the chicken in teriyaki sauce for at least 30 minutes before cooking. Add red pepper flakes for heat. Sushi rice is preferred for its texture.
