  • 3 lbs beef chuck roast Cut into hearty chunks.
  • 2 pieces dried guajillo chiles Provides mild heat and color.

  • 4 cups beef broth Rich base for flavors.
  • 2 tbsp vinegar Adds tanginess.

Instructions

Preparation

  • Toast the chiles in a skillet over medium heat for 2-3 minutes until aromatic. Remove stems and seeds.
  • Blend the toasted chiles with garlic, chopped onion, cumin, oregano, ground cloves, cinnamon, and 1 cup of beef broth until smooth.
  • Season beef chunks with salt and pepper. In a large pot, heat oil over medium-high heat and sear beef until browned.
  • Pour the blended chili sauce over the beef. Add the remaining beef broth and vinegar, stirring to combine.
  • Cover the pot and reduce heat to low. Simmer for 2-3 hours until beef is tender and easily shreddable.
  • Shred the beef in the pot using two forks and stir back into the broth.
  • Warm corn tortillas and serve birria in them, garnished with fresh cilantro and diced onion.

Notes

Use fresh ingredients for best flavor. Adjust spice levels and let the birria rest before serving for enhanced flavor.
