Ingredients

For the crust

  • 1 cup graham cracker crumbs (or crushed digestive biscuits)
  • 3 tbsp unsalted butter (melted)

  • 8 oz cream cheese (softened) Make sure it is at room temperature.

For decoration

  • Easter candies (mini eggs, jelly beans, or chocolate bunnies) For topping.
  • Whipped cream (optional) For topping.

Instructions

Preparation of the crust

  • In a bowl, mix together graham cracker crumbs, melted butter, and optional sugar.
  • Press the mixture firmly into the bottom of a muffin tin or mini cheesecake molds.
  • Chill in the refrigerator while preparing the filling.

Making the cheesecake filling

  • In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  • In a separate bowl, whip the cold heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until fully combined.

Adding colors

  • Divide the cheesecake filling into separate bowls.
  • Add a drop of pastel food coloring to each bowl and mix until the desired colors are achieved.

Assembling cheesecakes

  • Spoon the colorful cheesecake filling over the chilled crusts, smoothing the tops.

Chill and decorate

  • Refrigerate the assembled cheesecakes for 2-3 hours until set.
  • Top with Easter candies and a dollop of whipped cream before serving.

Notes

For a healthier alternative, use Greek yogurt instead of cream cheese. You can also experiment with low-sugar candies.
